Here it is, a towering, nearly four foot high croquembouche with rice paper peonies.
I was approached by a bride to make a croquembouche for her wedding in September 2014.
This croquembouche is very beautiful and was a real talking point.
The peonies are are made from rice paper with pearl centres.
This huuge croquembouche is actually a fake. As the croquembouche was to be on display all day, it could not contain fresh ingredients. I therefore made four hundred chocolate profiteroles to be served as a dessert for the wedding pudding course.
The event was a great success!
